Kerala-Style Crab Roast is one of the most aromatic and flavorful seafood dishes from South India, and this recipe delivers the perfect balance of heat, tang, and richness. Inspired by Curry TV, this version uses pre-cooked Dungeness crab, allowing the crab meat to absorb layers of spice and coconut-infused flavors without overcooking. The base of the dish begins with fragrant coconut oil, which is essential in Kerala cuisine, followed by fenugreek seeds that release a gentle earthy bitterness when lightly toasted.

Finely diced red onions are sautéed until soft, seasoned with salt to speed up cooking. Fresh ginger, garlic, and split green chilies add natural heat and depth to the roast. Unlike many Kerala seafood dishes that rely on red chili powder, this recipe gets its spice from green chilies and black pepper, making the flavor warm, earthy, and peppery rather than fiery.

A generous addition of curry leaves enhances the aroma, while coriander powder and turmeric build the signature Kerala curry profile. Tomato slices are added next, creating the thick, rich base that gives the dish its roasted texture. Once the tomatoes soften, soaked kombu (cambodge / kodampuli) and its water bring a gentle sourness that pairs beautifully with crab.

When the gravy is ready, the Dungeness crab is added and steamed briefly to absorb the flavors. To finish, a diluted second-press coconut milk thickens the gravy without curdling, ensuring a silky, flavorful coating. A final touch of black pepper and a drizzle of thick coconut milk brings the dish together.

This Kerala-Style Crab Roast is perfect with rice, appam, puttu, or parotta—and promises an unforgettable blend of coastal spices and traditional flavors.

Notes

Lightly toast fenugreek seeds—overcooking them can make the dish bitter. Also, always dilute coconut milk before adding it to a sour gravy to prevent curdling.
